Dough is proved in the kitchen, toppings are prepared in the morning and every pizza is baked once the order arrives rather than sitting under a lamp. Orders are taken at the counter or by telephone, boxed so they travel flat, and large orders are cooked in batches for a collection time agreed in advance.
